
Ingredients
For the French Toast:
4 eggs
½ Cup milk
1 Tsp Vanilla
1 ½ Tsp cinnamon
Pinch of salt
I loaf (16 slices) stale brioche bread
¼ Cup butter for cooking
For the filling:
4 oz cream cheese, softened
¾ Cup diced Bobalu strawberries
1 Tbsp sugar
1 Tsp Vanilla
Directions
Make sure the bread isn’t fresh and leave it out overnight if needed to make it stale. When you are ready to make the French toast, whisk together eggs, milk, vanilla cinnamon, and salt in a bowl and set aside.
In a separate bowl, mix cream cheese, strawberries, vanilla and sugar. Use a hand mixer on low for 1-2 minutes to mix together well. Set aside.
Spread the strawberry filling evenly on a slice of bread using about 2 Tbsp of filling. Stack another piece of bread on top like you would a sandwich. Dip the two pieces of bread into the egg mixture well and make sure the bread is coated well.
Add 2 Tbsp butter to a skillet over medium heat. Once the butter has melted, place the bread in the skillet and let it cook 3-4 minutes or until it starts to brown. Flip the bread over and repeat on the other side. Repeat with remaining stuffed bread. Halfway through cooking you will want to add another 2 tbsp butter to ensure it cooks evenly.
Serve with maple syrup, whipped cream and fresh strawberries!
