Ingredients
- 2 Cup all-purpose flour
- 1 Tsp baking soda
- 1/2 Tsp baking powder
- 1/2 Tsp salt
- 2 Tsp cinnamon
- 1.5 Cup diced Bobalu strawberries
- 1/2 Cup light brown sugar
- 1/4 Cup granulated sugar
- 1/2 Cup vegetable oil
- 1/4 Cup milk
Streusel Topping:
- 1/2 Cup all-purpose flour
- 1/4 Cup unsalted butter, cold
- 1/3 Cup light brown sugar
- 1/2 Tsp cinnamon
Directions
Preheat oven to 350. Grease a 9×9 pan with nonstick cooking spray and set aside.
Combine the dry ingredients: flour, baking soda, baking powder, salt and cinnamon. In a separate bowl combine strawberries, brown sugar, granulated sugar, oil and milk. Add the strawberry mixture to the dry ingredients and mix until combined. Make sure not to over mix, you want the batter to be thick. Pour batter into prepared pan and sprinkle with the streusel topping.
Bake 30-35 minutes or until an inserted toothpick comes out clean. Allow the cake to cool 20-30 mins before slicing and serving.
